
Burgers with fresh mozzarella, tomatoes with plenty of garlic, onions, basil and a splash of balsamic vinegar!
Burgers are a summer time favourite and these bruschetta themed burgers are a tasty treat! Bruschetta is an Italian appetizer consisting of grilled bread typically topped with tomatoes, garlic, olive oil, balsamic vinegar and salt and it goes well in burgers! These burgers are made with ground beef with onion, garlic, basil, and oregano mixed in, before they are formed into patties and grilled. The tomato mixture includes olive oil, balsamic vinegar, garlic, onion, basil and a pinch of salt. I like to top the patties with a slice of melted fresh mozzarella cheese before throwing them into the burgers! The final (and optional) step is to brush the buns with garlic oil and lightly toast them!

ingredients
- 1 pound ground beef (or chicken or turkey or pork)
- 1/4 cup onion, grated
- 4 cloves garlic, chopped
- 2 tablespoons basil, thinly sliced
- 1 teaspoon oregano
- salt and pepper to taste
- 4 slices (fresh) mozzarella cheese
- 4 buns (gluten-free for gluten-free)
- 2 cups tomatoes, seeded and diced
- 1 tablespoon extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 2 cloves garlic, minced/grated
- 2 tablespoons red onion, finely diced
- 2 tablespoons basil, thinly sliced
- salt and pepper to taste

- Mix the beef, onion, garlic, basil, oregano, salt and pepper, and form 4 patties.
- Cook the patties by grilling, or pan frying, or broiling, until cooked through, about 3-5 minutes per side.
- Place the mozzarella on top and let it melt.
- Assemble the burgers in the buns with the tomato mixture and enjoy!
- Mix everything well and let sit for a few minutes.

Option: Brush the buns with garlic oil and grill or grill and rub with garlic!
Option: Add your favourite burger/steak seasoning to the burgers.
Option: Add extra leaves of basil to the burgers.
Option: Drizzle balsamic glaze/reduction over the tomato mixture in the burgers.
